It is a fruit that belongs to the family of the Anonáceas that consists of some 800 arboreal species of the tropical regions, with fruits in berry and fleshy. The gender Anona consists of 120 species which about of them 20 are cultivated by its fruits in tropical America and southern Europe. It comes from the chirimoyo, a tree that can reach up to 8 meters high.

The sugar is mixed with the yolks until they have a creamy consistency. it is dissolved the jello in cold water, hot water is added, it is mixed to the cherimoya,then the mixture of sugar and eggs and the mixed cream . Lastly, the whites mixed are added with encircling movements. it is put in singular molds and it is refrigerated by 3-4 hours. To serve it, you put it on a plate (to facilitate the task, the mold can collapse for some seconds in hot water) accompanied with Moorish or strawberries in syrup, placed to the side. It is adorned with cut lemon shell in Juliana.
