Generic: The Pitaya

It is an exotic, wild fruit of intense red or yellow color, with many black seeds, very similar to those of the fig. The plant is green colored with many thorns, its name means scaly fruit. The yellow variety is cultivated in high tropical and tropical areas the red Pitaya: (Hylocereus ocamponi S.D). is considered to be original from Colombia.


PITAYA

The pulp contains axatives properties that help the digestive system, it has an intense smell and its pulp is very refreshing and sweet, although it is low in calories. It is low of nutritious, their caloric contribution is due to the carbon hydrates , although it exists another variety, the red one, that has less hydrates of carbon but bigger content in vitamin C.

Description:

-Both varieties have an ovoid form. The yellow one is characterized to have a crust with thorns and the red one for its thick crust
-The pulp of both is very aromatic and it is full with seeds
-Small and abundant seed
-Easy to peel
-Great flavor


Size:

-the red one is biger than the yellow one.
-The yellow one measures about 90 millimeters long and has a 65 to 70 millimeters diameter.
-The red one has about 12 centimeters long and a diameter from 75 to 80 millimeters.



Appearance:

-the yellow variety, initially is green but turns yellow when matured.
-Both have the white and replete color pulp of tiny black seeds.
-The red variety is characterized because its peel is red and thick and has green specks, contrary to the thorns that it presents the yellow variety
-They turn to yellow color when mature, givingit a very ornamental aspect.

Ingredients:

250 cc orange juice
grated orange
300 gr. blonde sugar
6 eggs

Preparation:

Mix the orange juice with the ralladuras(should be boiled three times changing the water each time), the sugar and the eggs until it it gets a homogeneous preparation.
- Caramelize the mold, Fill it with the preparation and Put it to the Maria Shower (boiling water in a covered pot) for 40 minutes
- Prepare the caramel for the decoration with the juice and sugar.
- Decorate with the caramel, orange clusters and leaves of mint.
